How This Calculator Works

For each meat: guests eating it × cooked portion per person × service factor (buffet 1.2, stations 1.15, plated and boxed 1.0) × a small reduction when you serve more sides, plus a safety buffer (10% buffet and stations, 5% plated). That cooked amount is converted to the raw weight you order using the cook loss for each meat. Portions per person before those factors match the rest of this site: pulled pork 0.5 lb raw, brisket 0.6 lb raw, ribs 1 lb raw bone-in, chicken 0.6 lb raw bone-in. Prices are average US grocery and warehouse-club prices, checked October 2026. See how to calculate catering per person for a worked example, catering portions for the reasoning behind each number, and BBQ cost per person for budgets.

FAQ — BBQ Catering Quantities

How much food do I need for a catering buffet?

For buffet service, add 20% to standard home-party portions — guests tend to take more when serving themselves and plate waste is higher. This calculator applies that waste factor automatically based on your service style selection.

What's the difference between raw and cooked weight?

Pulled pork loses about 45% during smoking. Brisket loses about half its weight. Ribs lose about 30%. Always order by raw weight — the calculator shows both cooked serving weight and how much raw meat to purchase.

How do you calculate catering quantities per person?

Formula: (guests × portion per person × service factor) + a buffer (10% for buffet and stations, 5% plated, none for boxed meals). Service factors: buffet = 1.2, stations = 1.15, plated and boxed = 1.0. Always round up — running out of food is worse than having leftovers.

What markup should caterers charge for BBQ?

Industry standard is 2.5–3.5× food cost. A 3× markup typically breaks down as: food (33%), labor (25%), overhead (17%), profit (25%). Events with complex setups or premium service warrant 3.5×.
