How We Calculate
Every quantity, price and factor on this site comes from one data file that the calculators, the party-size guides and our articles all read. This page lists those numbers, where they come from, and what they leave out. Last reviewed October 9, 2026.
What the numbers assume
- Adult guests, meat as the main dish, two sides, a 2–4 hour party, US units and US average prices.
- Weights are raw, as you buy them, unless a table says "cooked".
- Portions such as ½ lb of raw meat per adult are widely used catering rules of thumb, not USDA standards. We say so where it matters.
Meat portions, yields and prices
Raw weight per adult when that meat is the main dish. Cooked yield is the share of raw weight you serve after cooking.
| Meat | Raw per adult | Cooked yield | Planning price | Price basis |
|---|---|---|---|---|
| Burgers | 0.5 lb | 75% | $7.00/lb | 80/20 ground beef; BLS ground beef average $6.92/lb (Aug 2026), rounded up — BLS Average Price Data, U.S. city average, August 2026 |
| Grilled Chicken | 0.6 lb | 75% | $2.50/lb | bone-in thighs and drumsticks; BLS bone-in chicken legs $1.67/lb (Aug 2026); thighs and family packs usually cost more — BLS Average Price Data, U.S. city average, August 2026 |
| BBQ Ribs | 1 lb | 70% | $5.00/lb | baby back ribs; USDA advertised average $3.32/lb fresh back ribs (Oct 2026); we plan for regular shelf prices — USDA AMS Weekly Grocery Store Pork Feature Activity, week of Oct 5, 2026 (advertised prices) |
| Sausages | 0.4 lb | 90% | $5.00/lb | fresh brats or Italian links; USDA advertised average $4.19/lb dinner sausage (Oct 2026) — USDA AMS Weekly Grocery Store Pork Feature Activity, week of Oct 5, 2026 (advertised prices) |
| Hot Dogs | 0.2 lb | 95% | $5.00/lb | our estimate for name-brand franks — our estimate |
| Pulled Pork | 0.5 lb | 55% | $2.50/lb | bone-in pork butt; USDA advertised average $2.10/lb (Oct 2026); cooked yield 52–60% per USDA Food Buying Guide — USDA AMS Weekly Grocery Store Pork Feature Activity, week of Oct 5, 2026 (advertised prices) |
| Brisket | 0.6 lb | 50% | $5.50/lb | our estimate for a choice whole packer brisket — our estimate |
Planning prices are rounded above the published averages, because advertised and average prices are lower than many shelf prices. Prices vary a lot by region and store.

Catering calculator
For each meat: guests × cooked portion × service factor × sides factor × share of the menu, plus a buffer, then converted to raw weight. Service factors: buffet ×1.2 (+10% buffer), plated ×1 (+5% buffer), stations ×1.15 (+10% buffer), boxed ×1 (+0% buffer). Sides factors: 2 sides ×0.92, 3 sides ×0.87, 4 sides ×0.82. Food safety
Safe internal temperatures follow the USDA FSIS Safe Minimum Internal Temperature Chart. Perishable food should not sit out for more than 2 hours, or 1 hour above 90°F (USDA FSIS: Danger Zone (40°F–140°F)). Thawing times use about 24 hours in the fridge per 4–5 lbs (USDA FSIS: The Big Thaw).
| Food | Safe minimum |
|---|---|
| Ground beef, pork, sausages | 160°F |
| Poultry, all cuts | 165°F |
| Pork and beef steaks, chops, roasts, ribs | 145°F, then rest 3 minutes |
| Reheated leftovers | 165°F |
| Holding hot food | at or above 140°F |
Limitations
- Appetites vary. Children, heavy appetizers or many sides need less; long parties and big eaters need more. The guides include adjustment tables.
- Cook loss depends on the cut, trim and cooking method. Our yields are typical values, not guarantees.
- Prices are national averages and change every month.
- We do not test products hands-on. Amazon links open Amazon search results for the product named.
