How Many Ribs Per Person?

Plan half a rack of baby back ribs per adult when ribs are the main dish, which is about 1 lb of bone-in ribs per person. Meatier St. Louis-cut or whole spare rib racks go further, so you buy fewer racks for the same crowd. "Rack" and "slab" mean the same thing.

Smoking Time by Cut

CutAt 225–250°FDone when
Baby back ribsabout 5–6 hoursthe rack bends and cracks on the surface; about 195–205°F between the bones
St. Louis or spare ribsabout 6–7 hourssame bend test; meat pulls back from the bone ends

Pork ribs are safe from 145°F with a 3-minute rest (USDA), but they only turn tender in the 195–205°F range, which is why low-and-slow takes hours. Cook time depends on the cut, not on how many racks are in the smoker.

Tip: remove the thin membrane from the bone side before seasoning. It does not render and makes the ribs chewy.
