Buy 0.5 lb (225 g) of raw ground beef per adult when burgers are the main dish. That is two quarter-pound patties, one-and-a-half third-pound patties, or one big half-pounder. If hot dogs share the grill, most guests take one of each, so about 0.3 lb of beef per person is enough.

Which Ground Beef to Buy
80/20 ground chuck is the standard for grilled burgers: the fat keeps them juicy and most of it renders out on the grill. Leaner 90/10 beef dries out faster and is better for smash burgers on a griddle. Ground beef is safe at 160°F inside (USDA), so use a thermometer instead of cutting patties open.
